Ingredients:
1 tablespoon olive oil
1 onion finely diced
220g French beans (purple or green)
1 large carrot
1 clove garlic crushed
10g ginger grated or finely diced
2 tomatoes diced
1 red chilli pepper finely sliced
1 teaspoon ground coriander
Handful fresh herbs parsley or coriander
200 ml vegetable stock
Method:
- Chop the onion and put it in the saucepan with a little olive oil. Cook for about 5 minutes until soft.
- Add all the other ingredients to the pan, reserving some of the herbs to garnish with.
- Simmer over a low heat for about 45 minutes.
- Serve with crusty bread.
