Calendula Flowers

To prepare calendula flowers for eating, pluck the petals from the green flower base.

We would recommend just eating the petals and not the base.

Try calendula petals in salads, salsas, scrambled eggs, and frittatas. They can also be sprinkled on or stirred into hot dishes such as risotto and soups. They make a really pretty colourful garnish. The golden yellow flower petals mixed in white rice will change the rice’s colour without changing its flavour.

We suggest sprinkling the petals over your mixed lettuce leaves and then tossing in a dressing of your choice.
